Put summer’s bounty of fresh herbs to good use with Rosemary Basil Pecan Pesto – an easy and affordable alternative to store-bought pesto. Toss with pasta, spread on sandwiches, or use as a sauce on pizza.. the possibilities are endless!
Chances are, you’ve probably heard by now that pesto can be a great way to use up an abundance of basil before it goes bad. Perhaps you even consider yourself a seasoned veteran when it comes to homemade pesto. But did you know that this traditional Italian sauce can be a great way to use up other fresh herbs, as well?
The idea for this Rosemary Basil Pecan Pesto first came about in an effort to tame the herb
garden jungle that is quickly taking over the balcony of our apartment. While I’ve been doing my best to incorporate as many fresh herbs into dishes as possible, there are not enough caprese salads in the world that can handle the amount of basil that we currently have (alright, slight exaggeration, but you get the point). Think your slow cooker is only good for winter staples, like soups and stews? Think again! These Slow Cooker Sriracha Mango Chicken Tacos are perfect for those hot summer days when you have zero desire to turn on a stove or oven. So go ahead and get outside, enjoy the weather, and have dinner waiting for you when you return!
It’s gettin’ hot in here, so turn off all your stoves…
That’s how the song goes, right??
But for real, we are in the heat of summer here in Ohio and cooking on the stove or in the oven is just not in the cards right now. And apparently, I’m not the only person who feels this way because this month’s Recipe Redux theme is all about beating the heat and keeping your kitchen cool during the hot summer months.
So, how exactly do keep your kitchen cool (and NOT live off of take-out)? Well, the first (and probably most obvious) option is to load up on no-cook meals. I often find myself naturally gravitating towards sandwiches, salads, and smoothies during the summer months. But, after a while the allure of no-cook meals inevitably wears off and the craving for a nice home cooked meal sets in. So, what’s a gal to do?
Two words: Slow. Cooker. (more…)
Take a break from traditional salads with this refreshing Cauliflower Chickpea Tabbouleh. A quick and easy no-cook dish that’s perfect for feeding a crowd!
Over the past few years, I’ve sat back and watched as cauliflower went from being the last item left on the veggie platter to the star of the produce section. As a dietitian, witnessing this dramatic transformation has been like watching a child struggle through the awkward teenage years and finally come out on the other side as a beautiful, confident young adult. I couldn’t be prouder of how far my little cruciferous veggie has come! (more…)

Hi, my name’s Kara and I enjoy long, romantic walks along the
beach Farmer’s Market.
Okay, so I’ve never had a dating profile (and never will), but if I did.. I’m pretty sure that’s what my intro would say. (Don’t get me wrong, I’m all about the beach too.. but living in Ohio means that the farmer’s market makes for a weeee more feasible of a date night – or date morning)
I’ll be honest – I didn’t discover the beauty of farmer’s markets until about 5 years ago (which is a real shame seeing as I grew up about 15 minutes from one of the best public markets in the country), but you better believe I’m making up for it now!
Kyle and I have recently made it a habit to start every Saturday morning with a visit to the local farmers market. And let me tell you, I couldn’t think of a more perfect way to start the weekend. Something about slowly strolling along the sidewalks, talking with the vendors, and sampling local goodies just makes my heart happy. (more…)
Mini Nice Cream Snickers Bars are a healthier way to satisfy your nightly ice cream craving. Creamy peanut butter banana “nice cream”, date caramel, chopped peanuts, and dark chocolate all come together to create a delicious sweet treat that you can feel good about indulging in!
Real talk: I’ve been going through a lot of ice cream lately.
But can you blame me? The weather in Ohio has been on point these past few weeks. I’m talking temps in the mid- to upper-80s and sunshine galore. Aka perfect ice cream weather. (Just kidding.. any kind of weather is ice cream weather in my book)
Ice cream is always one of my favorite desserts no matter what time of the year – but as soon the temps start to heat up, my ice cream obsession reaches an all-time high. Ice cream, fro-yo, DQ blizzards.. no frozen treat is safe when I’m around.
While I’m all treating yourself, I found that my nightly ice cream ritual was starting to turn into more of a habit than a treat. So when I heard that the theme for this month’s Recipe ReDux was “Small Bite Desserts”, I knew this was a sign that it was time for an ice cream intervention. (more…)
