Hors d’oeuvres. Appetizers. Small bites. Tapas.

No matter what you call them, they’re an integral part of entertaining. Now, I should preface all of this by saying that I’m certainly no expert when it comes to hosting lavish gatherings (or just plain old gatherings for that matter).. BUT when it comes to eating, I like to think I know my stuff. (more…)

Yes, it’s almost summer… but more importantly it’s almost POTLUCK SEASON.

Mimosa Poached Salmon Salad

Mimosa Poached Salmon Salad is a quick, yet elegant dish that is sure to impress! Serve it up at brunch (with a mimosa on the side, of course) or with fresh crusty bread for a light and refreshing summer meal.

First off, thank you to everyone who read, commented, or shared my last post on IBS. I’m not usually one for talking about my feelings, so writing such a personal blog post was definitely not an easy task. But this is a topic that I’m extremely passionate about and believe needs to be spoken about more openly, so it was worth it. I just hope you know how much all of your support means to me!

Now, back to the food…

Have you ever found yourself so distracted by the thought of a recipe that you just NEED to make it in order to ever have hopes of focusing on anything else ever again?

No? Just me? Okay.

Well anyways, that’s how this beautiful creation came to be.

Earlier this week, I was just sitting around minding my own business and working on my thesis project, when out of the blue… BAM. Mimosa Poached Salmon Salad.

Why IBS is Not Just Something You Should “Learn to Live With”

“Thirty days hath September, April, June and November…”

This childhood rhyme played over and over again in my head this morning as I stared at the date on my phone and tried to piece together how on earth it came to be the last day of April.

I had big plans for April… plans to write up a series of blog posts about my struggle with IBS and dive full-force into my experience with the low FODMAP diet. But alas life does not always go according to plan…

Turns out, finding the words to sum up 7 years of pain (both physical and emotional), frustration, and confusion is easier said than done.

So instead, I’m sitting here on the last day of April, scrambling to form semi-cohesive sentences from years of built-up thoughts and feelings. Again, easier said than done.

Why April, you ask? Well if you haven’t heard by now, April is IBS Awareness Month. And while I wholeheartedly believe that Irritable Bowel Syndrome (IBS) is a topic that deserves year-round recognition, I couldn’t sit back and watch this month come and go without letting my voice be heard. After all, this condition has affected my life in more ways than I ever could have imagined, and I know that I’m not alone in feeling that way. (more…)

Hi friends! Long time, no chat.

Before I dive into today’s post, let me just apologize for my unintentionally intentional month-long hiatus (double apologies for the fact that this hiatus just so happened to coincide with National Nutrition Month… #dietitianfail). Life came at me real hard and real fast this past month and rather than add yet another stressor to the pile, I decided to take a step back and put the ol’ blog (err young blog..?) on the back burner.

But let me tell you, it feels good to be back. I have so much to tell you! Starting with a long overdue update on my ongoing digestive issues and my recent transition to the low FODMAP diet. But let’s save all that serious mumbo-jumbo for another day, shall we?
First, coffee. (more…)
