Hi friends, long time no talk!

I apologize for the radio silence on my end recently, but sometimes.. life happens. And well, life has definitely been happening lately. To say that this past month has been a whirlwind would be an understatement. Anddd it doesn’t appear to be slowing down any time soon.. by the time this post goes live, I’ll be en route to Chicago for the annual Food and Nutrition Conference & Expo (FNCE). I have been looking forward to this weekend ever since I last attended the conference 2 years ago (I had major FNCE fomo last year) and I can’t believe it’s finally (already!) here. I’m so excited to connect with fellow dietitians, catch up on the latest nutrition-related research, and feed my inner nutrition nerd – literally and figuratively. Fingers crossed that life slows down enough that I actually have time to sit down and share a recap of what I learn this weekend!

In the meantime, it’s back to regularly scheduled programming here on the blog.. and that means it’s time for another round of Recipe Redux. (more…)

Take a break from traditional salads with this refreshing Cauliflower Chickpea Tabbouleh. A quick and easy no-cook dish that’s perfect for feeding a crowd!

Over the past few years, I’ve sat back and watched as cauliflower went from being the last item left on the veggie platter to the star of the produce section. As a dietitian, witnessing this dramatic transformation has been like watching a child struggle through the awkward teenage years and finally come out on the other side as a beautiful, confident young adult. I couldn’t be prouder of how far my little cruciferous veggie has come!  Hi, my name’s Kara and I enjoy long, romantic walks along the beach Farmer’s Market.

Okay, so I’ve never had a dating profile (and never will), but if I did.. I’m pretty sure that’s what my intro would say. (Don’t get me wrong, I’m all about the beach too.. but living in Ohio means that the farmer’s market makes for a weeee more feasible of a date night – or date morning)

I’ll be honest – I didn’t discover the beauty of farmer’s markets until about 5 years ago (which is a real shame seeing as I grew up about 15 minutes from one of the best public markets in the country), but you better believe I’m making up for it now!

Kyle and I have recently made it a habit to start every Saturday morning with a visit to the local farmers market. And let me tell you, I couldn’t think of a more perfect way to start the weekend. Something about slowly strolling along the sidewalks, talking with the vendors, and sampling local goodies just makes my heart happy. (more…)

It’s the most wonderful time of the year…

Yes, it’s almost summer… but more importantly it’s almost POTLUCK SEASON.

Mimosa Poached Salmon Salad

Mimosa Poached Salmon Salad is a quick, yet elegant dish that is sure to impress! Serve it up at brunch (with a mimosa on the side, of course) or with fresh crusty bread for a light and refreshing summer meal.

First off, thank you to everyone who read, commented, or shared my last post on IBS. I’m not usually one for talking about my feelings, so writing such a personal blog post was definitely not an easy task. But this is a topic that I’m extremely passionate about and believe needs to be spoken about more openly, so it was worth it. I just hope you know how much all of your support means to me!

Now, back to the food…

Have you ever found yourself so distracted by the thought of a recipe that you just NEED to make it in order to ever have hopes of focusing on anything else ever again?

No? Just me? Okay.

Well anyways, that’s how this beautiful creation came to be.

Earlier this week, I was just sitting around minding my own business and working on my thesis project, when out of the blue… BAM. Mimosa Poached Salmon Salad.
