Are you the type of person who eats according to the date on the calendar? In other words, are you easily offended when someone mentions pumpkin outside of the months of October and November?

If so, then I suggest that click that little red “x” in the corner. of your screen. Because what I’m about to share with you today may not be suitable for certain audiences.

No, it’s not a pumpkin recipe (although that wouldn’t be THAT far fetched – I did make myself a pretty good pumpkin pie smoothie the other day…), but it’s pretty darn close. Ready for it?

If you know me at all, then you know that I have a major sweet tooth. I’m the girl that will leave part of her dinner untouched, and yet jump at the first mention of dessert. I like to think that I have a second stomach and it’s reserved exclusively for dessert.

That being said, It should come as no surprise that I was a fan of baking long before I was a fan of cooking. In fact, it wasn’t until a few years ago that I finally began to experiment with dishes that DIDN’T revolve around sugar. These days, I tend to spend more time cooking than baking (probably a good thing considering cupcakes are probably not the most nutritious dinner option), but you’d better believe I still take advantage of any opportunity to bake up some sweet treats.

Hello, hello! Just your friendly neighborhood Oompa Loompa popping in with yet another pumpkin recipe. And you thought I was joking when I said “I hope you like pumpkin”. HA!

In all honesty though, it was never my intention to turn this little blog into a virtual pumpkin shrine. It just sort of… happened. Kind of like when I had some leftover pumpkin sitting in my fridge and it just sort of *fell* into these oatmeal cups. Oops. #sorrynotsorry

I had grand plans for a productive weekend and yet somehow, by the time Saturday afternoon rolled around, I found myself curled up on the living room floor using a balled up t-shirt as a makeshift pillow. Funny how that happens.

Welcome back! Thanks for bearing with me through this awkward beginner food blogger stage (because you’re totally here for me and not the cookies that are waiting at the end of this post, right? Don’t answer that…). Anyways, while I’ve got you here, let’s chat a minute.

Nowadays, it seems like healthy eating has taken on a whole new (and more complicated) meaning. I’m not sure if this is a reflection of increased media/marketing efforts or an increased interest in healthy eating (or a combination of the two), but either either way it has led to a whole lot of confusion – and frustration – among consumers.
