My boyfriend, Kyle, and I tend to share a similar viewpoint on many topics. But food? Yeah, that’s not one of them. As an avid hunter, Kyle tends to be more of a “meat and potatoes” kind of guy and I’m… well… not.
So when you’re out to lunch at a local restaurant and your meat-loving boyfriend passes up a cheeseburger in favor of the house-made veggie burger, you take note (after he picks you up off the floor, that is).
Oh, and just in case that alone wasn’t enough to put a girl into shock… did I mention these burgers are made with beets? BEETS. As in, the gorgeous deep purple root vegetable that Kyle always claimed to attest. What???

Based on recent weather trends, I’m going to go out on a limb and say that Mother Nature falls under the “not ready” category. But lucky for all you fall fanatics out there, I’m thinking I may be able to persuade her with these No-Bake Pumpkin Spice Energy Bites…
I know, I know… a zucchini recipe in September? Shouldn’t I be, like, sipping on pumpkin spice lattes, baking apple pies and tweeting about how much I JUST LOVE FALL? Maybe. But when it’s 90 degrees in the middle of September, fall is the farthest thing from my mind. So for now, I’ll be over here stuffing my face with these Grilled Zucchini Tacos. Feel free to join.
These Grilled Zucchini Tacos were inspired by my standing order at a local restaurant chain, El Vaquero. While I’m not usually one for chain restaurants, this one’s an exception (mainly because they’ve got a pretty bangin’ happy hour from 4-8pm which includes jumbo margaritas). Plus they had a location right around the corner from our old apartment, soo you do the math…

Yup, toast. As in golden brown, crunchy sliced bread. I know what you’re probably thinking (“And you call yourself a food blogger?!”), but let’s get something straight here. I’m not talking about plain ol’ toast that has been haphazardly schmeared with butter… although there is a time and place for for that (most notably, local diners circa 2am). Nope, I’m talking about toast piled so high with toppings that you need a fork to clean the mess you’ve made once you’ve demolished that sucker.
Oh, and if you happen to be one of those crazy people who believes that toast consumption should only be restricted to the morning hours, be prepared to question everything you’ve ever known about this so-called “breakfast” food. In fact, some of my best toast creations have come about as impromptu lunches, dinners, or snacks. SO. MANY. POSSIBILITIES. (more…)

Whether I’m heading out for a day filled with activities or just taking a stroll to the mailbox, you better believe I’ll have a snack in hand. In fact, I would leave the house without my car keys before I would leave the house without snacks (you think I’m joking, but it’s actually happened). Hanger is a real thing people, and it can strike at any time. Best be prepared.
